From Grandma's Kitchen

I was asked to share some of my delicious recipies with the kids on the beach, so have at it:

Granny's Glazed Apples

Preheat the oven to 375.  Peel and core 4 Granny Smith apples.  This is the hardest part of the recipie - I like to eat a few cupcakes before doing this and turn on some Led Zepplin.  You can use one of those single coring dohickeys but peeling an apple is still a pain in the backside.  Horizontally slice each apple into about 5 slices, but keep them in apple shape, this is not a game of Jenga.  Sit in a baking dish - not you, the apples -  and pour a mixture of about a cup of no-sugar-added apple juice and 2 plops of melted butter over the top.  Bake about 45 minutes but pour the juice over the baking apples about every 15 minutes or so and pour the cooking sherry into your mouth about every 10.

While the apples are baking, heat 1 cup sugar and 1/3 cup water in a medium heat skillet and don't stir!  You can use a wooden spoon or wet pastry brush to keep brushing the crystals from the sides of the pan as it heats up.  After 15 minutes, remove from the burner and let it sit about a minute, then carefully add 1 plop of butter and stir until the butter melts.  Gradually add 1/2 cup fat-free evaporated milk and keep stirring (it's a good arm workout), cooking over medium heat 2 minutes or until the caramel melts and the concoction is smooth.  Add 1/2 teaspoon vanilla after you remove it from the heat.

After the apples cook and you take them out of the oven, pour this caramel goo in the center of the apple stack, letting it fill up and pour over the sides.  If you have leftover caramel, you can pour  it over anything.  Duke and I used to experiment with creative uses of caramel...oh, for the good ole days!
